Recipe: Chilled Cherry-Plum Soup
SoupsCHILLED CHERRY-PLUM SOUP
1 1/2 pounds plums
1 pound pitted cherries
1/4 teaspoon salt
1/4 teaspoon ground powdered ginger
1/2 teaspoon Dijon mustard
1/3 cup dry red wine
2 tablespoons honey
1 1/2 cup buttermilk
a pinch crushed dried mint
thin slices of fresh lime and/or thin slices of kiwi (for garnish)
Pit the plums and coarsley chop. Put into a heavy saucepan with cherries
and salt. Cook on low, covered, for five minutes and then add ginger,
mustard, wine, and honey. Cook covered five minutes and remove from heat.
Cool to room temperature. Puree half the mixture and add back into saucepan.
Whisk in the buttermilk and mint. Chill until very cold.
Serve with round slices of lime and kiwi.
