ISO: Summer Salad recipes without mayo

I am looking for some good cold salad recipes tat keep in the fridge a couple of days. I like to keep something cold to go with our meals in the fridge during the summer months. I have a good corn salad one, but would like any bean, corn, tomato, or anything else that you will share. Thanks!!
