Recipe(tried): White Bean Salad (Ensalada de Jud as Blancas)

WHITE BEAN SALAD (ENSALADA DE JUD AS)

Serves 4

1/2 lb. dried white beans
1 onion peeled & halved
1 bay leaf
Salt & ground pepper
MARINADE:
2 tbsp olive oil
1 tbsp vinegar
salt & pepper
Pinch of sugar
1 tbsp minced onions
1 tbsp minced green pepper
1 tbsp minced parsley

Place the beans in a pot with cold water to cover. Bring to a boil, drain the water, and cover the beans again with cold water. Simmer, covered, for 1 hour.

Add the onion, bay leaf, salt & pepper. Cook about 1 more hour, or until the beans are just tender. Rinse, drain, and cool.

Prepare the marinade by mixing together all ingredients. Gently fold into the beans.

Chill and serve in a bed of lettuce or mix with cooked, drained and cold pasta for a delicious pasta bean salad!
