My mother was born in Denmark and this recipe has been in the family for years and hopefully many to come - enjoy!
Traditional Danish Christmas Pudding

2 CUPS RICE
2 QUARTS MILK
SIMMER RICE IN 6 CUPS MILK
AS RICE COOKS KEEP ADDING MILK UNTIL IT THICKENS
ADD 1 TSP SALT
WHEN RICE IS DONE STIR IN REMAINING MILK
STIR CONSTANTLY - REMOVE FROM HEAT
COOL & COVER - SPINKLE SUGAR TIL THERE IS A THIN LAYER
COVERING THE SURFACE - REFRIDGERATE OVER NIGHT
ADD 2 TBSP ALMOND EXTRACT
MASH RICE (WITH POTATOE MASHER)SO IT IS NOT STIFF
WHIP 2-3 PINTS OF WHIPPING CREAM, FOLD INTO RICE
SERVE 2 CANS PITTED CHERRIES(WARMED) AS TOPPING
BEFORE SERVING ADD 1 ALMOND TO THE DESSERT & STIR
WRAP A GIFT OR TRINKET & WHOM EVER GETS THE NUT IN THEIR
DESSERT WINS THE PRESENT - AND REMEMBER TO CARRY ON THE TRADITION
YOU MAY ONLY MAKE THIS DESSERT AT CHRISTMAS!!!!
