Traditional Danish Christmas Pudding

Hi Rachel!
This coming Christmas I'm going to follow your Mother's recipe for the "Jule" pudding. My only worry is the amount of whipped cream. I'm already a bit on the fluffy side, but I guess once a year won't hurt. Also is it 2 teaspoons of almond extract or 2 tablespoons? Growing up in North China (amongst the foreign colony) with my Danish father and German/Russian mother -- a multi-cultural cuisine was served at home. But Christmas was always 100% Danish. I always tried to bribe our Chinese cook to tell me where the almond was... so I could get the marzipan roll dipped in chocolate or the marzipan little pig as the gift. Do you have any other Danish family recipes? Lorelee
