ISO: Uses for lemon peel

I am doing an Italian lemon liqueur as a gift for my mother. For this I had to peel 6 lemons, as the peels have to rest in wodka for one week. Now my question is, as these unprepared lemons are massively expensive in Austria (one is almost 1 Dollar), what can I do with them. There is still the whole fruit left without the peel, put it in the fridge yesterday, so maybe someone has an idea for using them, besides just squeezing out the juice, maybe for some kind of jam or so??
Any help would be appreciated. TIA
