Recipe: Curried Couscous Soup (WW points=4)

1 package Mediterranean curry couscous mix (such as Near East, 5.7 ounces)
1 (14.5 oz) can no-salt-added diced tomatoes, undrained
4 cups water
1/2 cup diced zucchini
1 teaspoon curry powder
1/4 teaspoon salt
1/4 cup almonds, toasted
Combine couscous mix and seasoning packet, tomatoes, and next 4 ingredients in a saucepan; bring to a boil. Reduce heat; simmer 5 minutes.
Top with almonds. Serve immediately.
Yield: 4 servings (serving size: 1 1/2 cups soup and 1 tablespoon almonds)
Selections: 2 B, 1 FA, 1 FR/V. Points: 4.
