ISO: vegetable loaf

Hey everyone,

I am trying to locate a recipe that my mom made in the late 70's or early 80's. It was either in Southern Living magazine or McCall's. I would like to make it now as my daughter is a vegetarian and I think she would love it.

There were assorted veggies (as I remember: carrots, yellow and zucchini squash and onion for flavor). The veggies were grated or julienned. I cannot find any sort of recipe that is close to this. Before I make myself a real mess trying to recreate this, I thought I would try to see if anyone has heard of this. I think it was served as a side. My college roomate and I would get one from my mom and eat it with chile con queso as a sauce, it was YUMMY!
