Red beans and rice
This is a very simple and inexpensive recipe - hope you like it.
l lb. red beans
1 sm onion
1 small bell pepper
Worchestire (sp?) sauce
Hot sauce to taste
Smoked sausage - could buy package of two/three, and use one (just slice it thinly), or could use small chunks of ham or both.
Splash of wine (optional)
salt
Put first 5,ingredients in a bowl, cover with two inches of water and let soak overnight.
Next day, slightly brown the sausage and put it in a big pot along with the beans, including the water, onions, etc.
Bring to a boil on the stove, reduce heat to simmer and let cook for about 2 - 3 hours. Season with salt during last 1/2 hour. May have to add more water while cooking, so just keep an eye on it. Ladle beans over rice, add cornbread (even the Jiffy cornbread is good and cheap!) and you have a hardy meal with leftovers.
