ISO: weight watchers - ricotta cheese bread pudding with pineapple

I made this over 20 years ago and can't find the recipe. You use a packet of Knox unflavored gelatin, ricotta cheese and sweetner. Plus cut up toasted bread and canned pinneapple. It is eaten cold and really good.
I can't quite rememeber the amounts. Sure would like to have it again.
