SPAGHETTI WITH CAJUN CHICKEN SAUCE
1 lb. dried spaghetti
2 tablespoons safflower or canola oil
1 large onion, minced
2 large celery stalks, minced
1 large green bell pepper, seeded and diced
1 1/2 pounds ground chicken
2 teaspoons Cajun Spice mixture (or to taste) (recipe follows)
1 cup chopped canned tomatoes, drained
Cook spaghetti as directed on package; drain.
Meanwhile, heat oil in 9-inch saute pan or casserole over medium heat. Add onion, celery and green pepper and saute until softened and translucent, about 10 minutes.
Add the chicken to the vegetable mixture and break it up into small bits with a spatula. Add the Cajun Spice and saute until the chicken is cooked through, approximately 5 minutes.
Add the tomatoes and cook until heated through Serve over the spaghetti.
CAJUN SPICE
In a small bowl, combine well:
1 tablespoon coarse or kosher salt
1 1/2 teaspoons sweet paprika
1 teaspoon EACH black pepper, dried oregano, and dried thyme
1/2 teaspoon EACH onion and garlic powder
Makes 4 servings
