ISO: What can I prepare ahead (eve before or early morning of) for Christmas dinner?

Help, I am making Christmas dinner for first time and am very anxious so I would love to do most of it beforehand (for a disaster buffer).

I am making turkey (18 pounds), simple bread stuffing, gravy with flour and stock - no giblets etc., rutabagas in a casserole, broccoli, mashed potatoes and squash soup. My questions are:

1) can I prepare gravy the evening before or in the early morning of the meal?
2) can I peel vegetables and place in water the evening before or early morning of?
3) can I prepare stuffing (to be placed in turkey) the evening before or only day of?
4) can I make the soup in early morning (squash - no cream or
anything) and put in crock pot for the day to simmer?

Any advise would be MUCH appreciated and Merry Christmas....
