Thank You: Pappasito's Enchilada Sauce

I wanted to copy Pappasito's enchiladas recipe and found this (Pappasito's Beef Enchilada Sauce). I converted it as best I could for home use. I'm not done yet--I've just made the sauce/gravy, but it's good. I think it's extremely close at the very least (obviously, converting and so on is going to lead to a touch more or less of a certain ingredient).
