Too late for this batch, but for sure I'll do that next time. The soup was just wonderful - DH cut off all visible fat and skin (boo hoo) and just picked the little bits of ham that were left.

I hadn't added any extra salt - just left it to the ham hocks to do the work - it wasn't too salty or too bland - just right, I think for him.

The soup was thick and rich and very flavorful.

We didn't get home until quite late so just had the soup - he got a clean bill of health from his cardiologist today - he seemed very pleased with DH's 24# weight loss since his surgery, and a drop of 90 points in his cholesterol, and significant drops in LDL and triglycerides. HDL had gone way up. So guess we're doing something right here!

The cardiologist told us that he wished he could get people to understand that EXERCISE does more for lowering your cholesterol and lowering your cardiac risk factor than all the diets and medications that are out there - just EXERCISE
