Just a little tip for the low fat thing. When I use ham hocks, I use a very sharp knife and cut off all the visible skin and fat and scrape the bone of all that fake smoke seasoning and wash really good under running hot water. The result is you still get the ham hock flavor, but not all the fat, smoke and salt taste. Hope this works for you.
