Recipe: Pumpkin Harvest Bread (Albers Corn Meal and Libby's Pumpkin recipe)

1 1/2 cups all-purpose flour
1/2 cup Albers Yellow Corn Meal
2 tsp. ground cinnamon
1 1/2 tsp. baking powder
1 tsp. baking soda
1/2 tsp. ground nutmeg
1/4 tsp. salt
1 cup Libby's Solid Pack Pumpkin Puree (not sweetened pie filling)
2 eggs
1/2 cup granulated sugar
1/2 cup packed brown sugar
1/4 cup vegetable oil
1/4 cup applesauce
1/2 cup raisins
Preheat oven to 350 degrees F. Grease and flour a 9x5-inch loaf pan.
Combine flour, corn meal, cinnamon, baking powder, baking soda, nutmeg and salt in a medium bowl; set aside.
Beat pumpkin, eggs, both sugars, oil and applesauce using a large mixer bowl. Beat in flour mixture just until blended. Stir in raisins. Spoon into prepared pan.
Bake for 50-55 minutes or until toothpick tests done. Cool in the pan on a wire rack for 5-10 minutes. Remove from pan allow to cool completely on the wire rack.
Makes 1 loaf
