That sounds like what I was looking for - I ended up roasting my pimentos and packing them in vinegar/salt solution because I couldn't find anything info on this! Next year I'll try doing them with some oil and vinegar as that is the way I usually buy them in little jars from an Italian Supermarket. We had quite a few pimentos in our garden (Eastern Ontario, Canada) and had to pick 'em and use them last week because of frost warnings. Thanks again! Jan
