Recipe(tried): pimentoe peppers

I roast and can my own pimentoes by roasting over a fire till blackened, put in bag till cool, peel and take seeds out. lay in layers in jelly jars, cover with a little olive oil and viniger. Process 15 min in boiling water bath. Or they freeze very well. Our season is about over here in southern ohio and i can't find pimentoe peppers anywhere. Not even at farm markets. Good luck.
