Recipe: Down East Pancakes (Arm & Hammer Baking Soda, 1949)
Breakfast and BrunchDOWN EAST PANCAKES
2 cups sifted all- Purpose flour
1 teaspoon Arm & Hammer Brand or Cow Brand Baking Soda
3 tablespoons sugar
3/4 teaspoon salt
2 eggs, well beaten
1/4 cup vinegar
1 3/4 cups sweet milk
1/4 cup shortening
Sift flour, soda, sugar, and salt together.
Combine eggs, vinegar, milk, and shortening and mix well. Add to dry ingredients and stir only until smooth.
Pour batter from tip of large spoon or from pitcher onto large heated frying pan or griddle. When underside is browned and before bubbles burst on top, turn and brown second side.
VARIATIONS:
Apple Pancake
Add 1 cup grated raw apples.
Blueberry Pancakes
Add 1/2 cup well-drained blueberries.
Makes about 20 medium-sized cakes
