40 lbs of apples and what to do?

Got a little overenthusiastic at the orchard this weekend! Need some new recipes for apples - beyond the usual pies, muffins and applesauces. HAve done that. Used about 2 lbs - 38 to go. Ha!

Does anyone have some good suggestions? If it freezes - even better.
