I thought one used a long-grain rice in a paella? Does a short grain make this paella more of a creamy texture?

I have printed this out, and have both a basmati and a calrose rice in my house. The basmati I use mostly, as it is a "whole grain", and better for you, but I always have the calrose around in case I want to make some sushi.

Thank-you for the excellent post. Anything with chickpeas and spinach is a hit in my house! And, we try to have a vegetarian meal or two, every week.
