Another Taffy Apple Salad recipe

Emily, this is a slightly different version of Jo's recipe.

CARAMEL APPLE SALAD

2 cups green apples, cut in chunks with skin on
1 large can pineapple chunks
2 cups mini-marshmallows
1-1/2 cups spanish peanuts
8 oz Cool Whip
1 teaspoon flour
1 egg, beaten
1/4 cup sugar

THE NIGHT BEFORE - drain pineapple (save juice) and add marshmallows, cover and refrigerate. Take juice, add flour and cook till just to a boil. Add egg and sugar and cook for a few minutes to mix, cover and refrigerate.

THE NEXT DAY - mix Cool Whip and pineapple juice mixture with mixer. Add lemon juice or Fruit Fresh to cut apples to retain color. Mix with pineapple,add peanuts then mix everything together.
