Recipe(tried): Taffy Apple Salad

Taffy Apple Salad
from 1985 Country Magazine

1 Tablespoon flour
1/2 cup sugar
1 egg-beaten
2 Tablespoons cider vinegar
1 8oz can crushed pineapple-drain & reserve juice
4 cups cubed unpeeled apples
1 cup salted peanuts
1 8oz Cool Whip

Combine flour and sugar in a small saucepan. Beat egg and add to flour/sugar mixture. Add vinegar and reserved pineapple juice to the mixture in the pan. Cook over low heat, stirring frequently until mixture thickens. Place in fridge to cool completely.

Meanwhile, cube apples and place in a large bowl. Add drained pineapple and peanuts. Pour cooled dressing over all and stir together. Add Cool Whip and stir until mixture is combined. Place in serving bowl and sprinkle with additional peanuts.

Don't let the vinegar scare you! This is wonderful and all ages enjoy it!
