BBQ Potatoes

I dont know if this will help but this is what I do in the summer heat.

I take a big piece of tin foil and roll it out on the counter(18inx12in)and slice potatoes on in just like scallop potatoes. Next I slice onion on top of the potatoes. This is where you can get creative. You can add cheese, fresh mushrooms, green peppers or what ever you may like. layer it on top of the potatoes and onion. Next season with salt and pepper or what ever seasoning you like. Next dab butter(marg) all over it making sure there is enough to keep it moist inside while cooking. Close up the ends and role them towards the middle and then close the top and roll down towards the middle(hard to explain but I think you know what I mean) to seal it!! Sometimes I double the foil to make sure there are not drips. Start your BBQ and put the potatoes on the upper rack or on low heat which ever. Turn ever 5-10 minutes for about 45 min or until the potatoes are done. Start cooking this ahead of the rest of your meal as it takes a little longer to cook. Open and enjoy!!
