I have this manual & I make Hot Cross Buns all the time and everyone wants some.I live in Canada and the only thing different in the US is that you should use Bread Flour instead of all-purpose flour.-Judy
HOT CROSS BUNS
Bread Machine (2 lb. recipe)

1 1/3 cups milk
1 egg, beaten
1/4 cup butter (I melt it first)
1/3 cup sugar
1 1/4 teaspoons salt
3 3/4 cups all-purpose flour (4c. bread flour)
1 1/4 teaspoons cinnamon
1/2 teaspoon ground cloves
1/4 teaspoon nutmeg
1 1/2 teaspoons yeast
3/4 cup raisins or dried mixed fruit (1 c. is OK)
FOR THE GLAZE:
3/4 cup icing sugar
1 tablespoon milk
1/4 teaspoon almond flavoring
Follow machine manufacturer's instructions. (I select Dough/Pasta setting, adding the fruit at the "add ingredient" beep.)
When cycle is complete, remove dough from machine to a lightly floured surface. Divide dough into 18 pieces. Shape each piece into a round, slightly flattened bun. Place 2-inches apart on greased baking sheets. Cover and let rise 30 minutes or until double in volume.
Combine 1 slightly beaten egg with 1 Tbsp. of water and brush on buns. With sharp knife, make two cuts 1/4-inch deep on top of each bun to form a cross.
Bake at 350 degrees F for 15 minutes.
While they bake, mix the glaze together. Remove from oven and immediately drizzle cross with glaze.
Yield: 18 Buns
