bread improver

I also had this question when my mother-in-law gave me this recipe... ^_^ YOu are lucky because you live in US and should be able to find "bread improver" in the super market -- in the baking goods/flour section (or bread flour suppliers?) It is supposed to improve the volume, taste and etc. of the bread you make. You can find the "all natural ingredients" ones and I recommend it. If you can't find it, it's OK not to use. It's just an EXTRA thing.

I wouldn't suggest Emplex as when I was introduced to it. My mother-in-law gave me this little clear jar that "didn't say what's in it", like most of the Asian goods. (I am a Chinese so I know this... Ha, ha...) Until now I told her that there might be some unknow chemicals and etc. but she doesn't care and still use it for all her bread. (only bread). I guess it's OK as none of us have gotten poisoned. I am just"over cautious" I guess...
