Hi!
Check out the King Arthur Catalog and website (www.kingarthurflour.com).
One thing I use in place of some sugar in my recipes is diastatic malt powder.
It helps lighten it up. This is an ingredient in "Lora Brody's Bread
Enhancer." Also try www.breadmachinemagic.com.
