Cake yeast/dry yeast equivalents

Misc.
Nicky,
Fresh (cake-form) yeast is usually sold in .6-oz and 2-oz sizes. The .6-oz size is equivalent to 1 envelope of active dry yeast, or 2 1/4 teaspoons dry. The 2-oz cake equals 3 envelopes dry.
Fresh yeast doesn't need to be dissolved the same way that dried yeast does; simply crumble it into the dry ingredients, or mash it with a bit of sugar and soften it in warm water before adding it to the recipe.
If the yeast you were given wasn't labeled with a specific weight, an approximate equivalent for the .6-oz size cake would be a piece the size of the end of your thumb from the tip to the first knuckle.
Hope that helped.
