Canning

Misc.

You should be able to find the Ball Blue Book for Canning just about anywhere jars are sold--unless they are out of it. you might ask. Wal Mart, K Mart, and those type of stores usually have it. Some grocery stores also have it. You might want to think about buying a pressure cooker if you plan to do lots of canning. Some things are not safe unless canned in one. But if you are just doing pickles, salsas, and tomatoes, those can be canned in water bath. Pressure cookers are not not cheap. Another choice might be to get a pressure cooker pan that you will use for a lot of other cooking and not just canning. Here again, the price will vary from $40 to well over $100 depending upon the size and brand. These pans won't be big enough to can quart jars but will half pints and some are large enough for pint jars. Anything that is going to be canned and stored should have the jars sterilized. Another wonderful source of information on canning is your county extension office. And they usually have booklets they can give you at no cost that should be very helpful. You should also be able to find some books at your library. Hope this is somewhat helpful
