I stress calling the county extension agent! She has answered many a question for me. They are always helpful and Know the proper pressures for your area on pressure canners, are a wealth of info on Canners, or whatever you need. Canning is easy and frees up the freezer. If done properly you don't have to worry. I did 200 pints of salsa last year, not to mention the green beans, tomatoes, tomato juice... I even taught my hubby to can a couple of years ago when I was gone. And he even called the extention agent on his questions;)
