Hi Lori,
Canning is pretty easy. The main thing is to get everything clean as far as utensils and your hands, etc. I usually end up washing my hands alot!
One thing I would suggest is, if you know someone who has canned for awhile, ask them if you can come over to help them do it one day. It will give you hands on experiance and you can find out if this is something you really want to do. I have had friends come to my house to show them how and I have gone to friends houses to show them. Usually if I go, I take my canner and the whole bit. I was always happy to do it, and I bet someone you know would be happy to show you.
