Canning Spaghetti Sauce -- for Anmarie

Yes it is very possible to can spaghetti sauce, meat and all if you are of a mind. Here are some web sites with receipes and instructions. The problem with the receipes is they all say you must (emphasis on MUST) follow the proportions exactly. So, you probably cannot use your own favorite receipe unless the ingredients and proportions pretty much match what is called for. I'm trying to find out how to adjust cooking times to allow more flexiblity in the ingredients, but so far no joy. I did find one site that said for canning mixed vegetables you have to use the cooking time and method for the most restrictive ingredient. I would expect the same rule to apply to spaghetti sauce and its various ingredients. I haven't been able to confirm that, however. I included in the list of web sites some locations that talk to spaghetti sauce ingredients...like mushrooms. I'm going to use the pressure canner method. Tomatoes are right on the edge of what is safe to can using the water bath method and what you need to do in a pressure canner. So, I'm going to error on the side of playing it safe. Good luck!
