Cannoli help

What kind of "cream" are you using?

Cannoli are usually filled with a sweetened ricotta cheese filling. If you're using ricotta cheese, it needs to be drained of excess liquid before mixing it with the sugar.

If you're using a whipped cream filling, the cannoli need to be filled just before serving so the cream doesn't break down. It's best to use whipped cream stabilized with gelatin (there are recipes on this site for whipped cream frosting using gelatin -- I don't remember the proportions offhand), or even easier, use Cool Whip.
