Hi this could be due to a number of things. First off NEVER overbeat muffins you'll get that "peak" on them -- you want them rounded not peaked.

>> are the ingredients fresh? flour as well?? is the baking powder can older?? maybe as simple as getting a new can! :)
>> are you filling the muffin cups enough?
>> is it the recipe? or does it happen with all mixes and recipes? A problem with an individual recipe may be not enough baking powder
