Shirley Corriher wrote this incredible book from her experience as a chemist.
Today I made the creme brulee and learned a lot about what it is, besides being totally downright , maybe the most rich dessert devised. The book, COOKWISE, is secrets of cooking revealed. She lectures all over the place and the IACP is the first organization that revealed her to the world at regional and national meetings. Take a look, though I doubt that she will surpass Madeleine Kamman in cooking knowledge.
