Recipe: Seafood Quickie (using cream of mushroom soup and evaporated milk)

1 (8 oz.) pkg. imitation crab meat, chopped
2 cups shrimp, diced
2 cups cooked rice
1 (10 3/4 oz.) can cream of mushroom soup
5 oz. can evaporated milk
4 oz. can sliced mushrooms, drained
1/4 cup minced onion
1/4 cup minced pimiento
2 drops Tabasco sauce
1 1/2 cups grated cheddar cheese, divided use
Preheat oven to 350 degrees F. Butter a 2 or 3-quart casserole dish.
Mix diced shrimp and crab meat. Combine with remaining ingredients, reserving 1/2 cup cheddar cheese for top. Pour into prepared casserole dish. Top with remaining 1/2 cup of cheese.
Bake at 350 degrees for 30 to 35 minutes. Freezes well.
