Debbie, thanks for your comments...I too love to come into this site and read your delicious dinner ideas! I also love spinach and havae a lot of recipes for it, including Spinach Soup which is creamy and my all-time favorite, Spanikopeta (Greek Spinach Pie). My Mom also loves it and this time since she lives close by she gets to take half the pan home. It is sooo good. I am making it tomorrow for our lunch along with a salad.
