You can use soy flour and water for an egg substitute.

1 heaped tbs soy flour
1 level tbs water.
mix together and this equals one egg.

I used apple sauce instead of fat in some cookies once...they were kinda chewy but I suspect i needed more flour. They tasted good tho!!!

So I guess you could use a regular choc chip cookie recipe, substitute the fat for applesauce/oil and the egg with the above mixture. I added in cinnamon and nutmeg to lift the taste a little.
