Here is a great appetizer to serve for Father's Day. I usually make this on special occasions and it's always a hit.

ANTIPASTA KABOBS

6 skewers
12 small balls FRESH mozzarella cheese
12 cherry tomatoes
12 pieces roasted RED pepper
12 pitted black olives
12 small leaves FRESH basil
Extra Virgin Olive Oil
Chopped fresh basil

Thread skewers alternately with mozzarella balls, cherry tomatoes, red pepper, black olives and basil leaves. Brush with olive oil and sprinkle with chopped basil. (Note: This can be made a few hours ahead of time and kept in the refrigerator.) Serves 6.
