This is an easy recpe to do. I don;t have measurements as I don;t use any but here you go.

Fry up some sweet onions until they are golden brown but still soft.

Peel some firm potatoes and cook until they are just tender then when cool slice into thick rounds.

Layer the onions and potatoes into a baking pan. You can add in some coked sliced red and green peppers here, along with whatever veggies you like that can withstand baking.

Beat your eggs with some parlsey, salt and pepper and pour the egg mixture over the veggies.

Bake until the eggs are just set. Take it our of the oven, it will carry on cooking.

I sometimes layer in small artichoke hearts and alao add in some garlic to the onions.

You could add in extra spices too - maybe some chillies and fresh coriander/cilantro too.
