Recipe: Tuna Croquettes (1930's)

Main Dishes - Fish, Shellfish
TUNA CROQUETTES

1/3 cup butter
1/2 cup flour
3 cups milk
1 teaspoon salt
1/4 teaspoon paprika
3 Tablespoons chopped celery
3 Tablespoons chopped parsley
3 Tablespoons chopped pimentos
1 1/2 cups tuna
2 cups cracker crumbs
1 egg
2 Tablespoons water

Melt butter and add flour. Blend and add milk and cook until very thick sauce forms. Stir constantly. Add seasonings and tuna. Cool.

Take tablespoonful of mixture and dip in crumbs, then dip in egg
which has been mixed with the water, and dip again in the crumbs.

Shape conical. Chill. When ready to serve, fry in deep hot fat.
