My husband wasn't working yesterday and on the spur of the moment we decided to take a trip to see the Bok Tower and Gardens near Lake Wales. That is in central Florida 2 hours north of here. It was a fun trip and beautiful day with a high in low 70's and lots of sunshine.

I used the mozzarella in a pasta dish with fresh roma tomatoes, balsamic vinegar, fresh basil and olive oil tossed together. It was good, not great. It is a variation of one I make with Boursin garlic-herb cheese. That is better, because the cheese melts making it creamy. Mozzarella softened but didn't make a creamy sauce. Tonight we are having the leftover Choucroute Garni, then I am going to have to start thinking lighter.
