Has anyone harvested fresh lemon grass?

I would also like to know how to harvet lemon grass. I have a plant in a large pot that over wintered in the house and it's now back out side doing well.

I've copied many Thai recipes that use it. And I know the subsitute is lemon peel.

The question is how to get one or two stalk out of the plant and not damage the rest of the plant.
