Lemon Grass vs Lemon Balm
Misc.Hi Kathy, I researched the subject in one of my books, and it is a different plant that is called lemon balm that repels mosquitos (however, down here I am sure they would just carry it away). I believe it is the source for citronella candles. I also learned that lemon grass to be eaten needs to be very finely pulverized or minced, but the tougher parts and tops can be used to flavor broths or teas, then discarded. Perhaps much like bouquet garni? Good luck with the Thai cooking, perhaps you can post a follow-up after you have tried some recipes.
