Hello Kathy and Margaret, I was hoping to find reference to lemon grass on this site. I couldn't resist a pot of it, but have never actually used it! However have harvested it and mine separates from the rest, sort of like a green onion. Just gently pull a stalk away and if necessary, cut the root like structure that binds it to the plant. Then you can peel off the tough outer layers and crush or mince the tender inner parts. I understand only a couple of inches at the bottom or less is actually usable. Hope this helps with harvesting, how about some recipes?
