Misc. I do admire your adventure! Both recipes I would enjoy eating but they're a little out of my league. It's so funny that you say these are from a newspaper clipping. Just this morning I cut one out and thought I remembered correctly that you and Carol,IL enjoyed portobello mushrooms. I happened to be in the chat room a little while ago, Carol was there and she confirmed it was the two of you.
If you'd be interested, I'd be glad to post the recipe. Way too complicated for me. It's from a young, chef wanna-be who won a contest and a $1,000 renewable tuition scholarship from Johnson & Wales University in Rhode Island. He will study culinary arts there in the fall (yes, he just graduated from high school!). His recipe is called Portobello Napoleon with Wild-Berry Glaze. For the contest his entry had to be a healthy dish, high in fiber and low in fat & sodium and make a great presentation of course. You make a vegetable stock (he provides recipe-simmers for 10 hrs - yikes!) to add to couscous, spoon couscous onto plate, place Napoleon on top (grilled mushroom cap, zucchini, yellow squash, red bell pepper & onion). Meanwhile you've made wild-bery glaze and pour around edge of couscous.
