Hi Lynda,

A cannoli is a pastry shell, cylindrical in shape and crunchy; it is filled with a creamy ricotta filling. They can be found in boxes in Italian Food Markets. The brand I use is by Alessi. It is everybody's favorite dessert when at an Italian restaurant or cafe. They are fabulous when made right!
