I cut up big batches into even slices/rings and layer them in plastic boxes - like those scouts used to sell cookies in - and then freeze. When I use then\m, i just take the amount I need right into food. The leek must be dry, following this method, or else you dont get the single frozen effect.
Works best for grown, big leeks, not slim young ones.
