Most of the time I roll my boneless chicken breasts with
"Alouette" cheese and a thin slice of ham or proscuitto.
Alouette is that soft spreadable herbed cheese - it used to be
in a small tub in a box that was green and white...

My mother's favorite chicken rollup is simply a slice of
swiss cheese , some fresh sage leaves and a piece of tomato.
