you probably don't need it. A good pressure cooker (or two) will do the job - if you need this kinda job doing. Yes, Page, you can get steam baskets for pressure cookers. This sort of pan has been around for a while - there is even a set in our family - and very good it is too, if you are prepared to totally change your lifestyle to cook like this, and modify all your cookbooks. For most people hang on to your 500 bucks (or maybe spend a little on a pressure cooker). One final tip, you have to be very careful about washing and cleaning them - one little dink on the rim will ruin the seal, as will the use of abrasives or scourers.
